That’s why this meal – tortilla shell pizzas – works so well.

  • Preheat oven to 375F
  • Take one flour tortilla and top modestly with choice of sauce, desired toppings, and cheese (don’t overdo it on the toppings, as a thick layer of toppings won’t cook evenly on these thin pizzas)
    • Sauce options: Pizza sauce, marinara sauce, sweet chili sauce, salsa
    • Toppings options: Thinly sliced veggies like mushrooms, onions, bell peppers, olives,
    • Meat options: Pizza sausage, pepperoni, grilled chicken, hamburger
    • Cheese options: Mozzarella, cheddar, pepper jack, Parmesan

The trick to making really tasty tortilla shell pizzas is to keep the toppings light. Too much sauce, toppings, and cheese can overwhelming this thin crust.

Ingredients

  • 1 tortilla shell (white, whole wheat or homemade)
  • 2 teaspoons sauce (sweet chili sauce, tomato sauce or salsa)
  • 1 tablespoon toppings (meat, chopped vegetables, olive, etc.)
  • 2 tablespoons cheese (Mozzarella, Parmesan, or smoked Gouda)

Instructions

  1. Preheat oven to 375F. Top a tortilla shell with desired sauce, toppings, and cheese.
  2. Bake for approximately 7 to 8 minutes. If you can do so safely, bake the pizzas directly on the oven rack for an extra crispy crust.
