Lately, I’ve been a bit obsessed with the idea of putting fruit on pizza. We’re all familiar with the classic pineapple + ham combination which is one of my personal favorites. But why isn’t equal attention given to other fruitsĀ likeĀ peaches, nectarines, figs, and even grapes?
Tonight I made a fun little flatbread that combined several interesting flavors and textures: sweet grapes, salty prosciutto, spicy arugula, and a splash of cream. I made two: one pizza-style, and one cut into bite-sized appetizers.
I understand prosciutto isn’t a cheap food, so feel free to substitute bacon or leave it off altogether. I spent $3.99 for a package of prosciutto and used about 1/3 of it – so it didn’t end up costing too much. Now I can experiment in the next few days with other recipes containing prosciutto.

Cook Time: 10 to 15 minutes There's no need to add salt, since the prosciutto is quite salty itself. I bought packaged pizza dough from Trader Joe's for $1.29. 1/2 package (8 ounces) pizza dough, or one medium ready-made pizza crust Preheat oven to 415F. Roll out pizza dough on a flat, floured surface. You will want a thin crust for this flatbread/pizza. Place dough on a greased pizza pan. Top pizza dough with a splash of cream. Sprinkle shredded mozzarella evenly over crust. Top with prosciutto slices and grapes. Bake for 10 to 15 minutes, or until pizza is lightly browned.
Grape, Proscuitto, and Arugula Flatbread Recipe
Ingredients:
Cream
1 cup shredded mozzarella cheese
6 slices prosciutto
1/2 cup red seedless grapes, halved
2 cups fresh arugula leavesDirections:
Remove pizza from oven and immediately place arugula leaves on top.
Pizza can be eaten hot out of the oven, or cool, cut into small pieces and served as an appetizer.
