Tomatoes can be used in so many delicious ways!

I make use of late-summer tomatoes by making August tomato soup. It’s a very simple, pure tomato soup that tastes like the most delicious sun-ripened tomatoes.

The roasted tomato salsa makes use of oven-roasted tomatoes, which brings out their sweetness. You can add as much spice as you want.

You can’t mention tomato recipes without mentioning BLT sandwiches! The BLTs with bacon mayonnaise are bursting with bacon-y goodness, and of course, tomatoes.

The bruschetta-style pita pizzas are delicious and garlicky. One of my favorite homemade pizza recipes ever.

If you have a bumper crop of tomatoes at the end of summer/early fall, you can freeze or can them for future use.
