The frosting filling for this cookie calls for powdered sugar. If you don’t have powdered sugar on hand, you can make your own at home.

This is a great trick to have up your sleeve when you are out of confectioners sugar and want to avoid making another  trip to the grocery store.

You can store these cookies in an airtight container, refrigerated, for several days. Or make them ahead of time and store in the freezer in an airtight container.

Homemade Oatmeal Cream Pies

This copycat Little Debbie recipe can be made into regular-sized or bite-sized cookies. Just remember to reduce the baking time slightly if you decide to make smaller cookies.

Ingredients

For cookies

  • 1 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) softened butter
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 1/2 cups dry oatmeal (old-fashioned)

For frosting filling

  • 2 1/2 cups powdered sugar
  • 1 tablespoon melted butter
  • 1 to 2 tablespoons cream or half-and-half

Instructions

  1. To make cookies, combine dry ingredients in a large mixing bowl. In a separate bowl, cream together butter, white sugar, and brown sugar. Stir in beaten eggs, honey, and vanilla. Add dry ingredients to butter mixture and stir to combine. Mix in oats. Chill cookie dough for an hour or so before baking to allow the dough to harden.
  2. To bake, preheat oven to 350F. Place dough by tablespoonfuls onto a large cookie sheet. Bake for 8 to 10 minutes, until cookies are slightly browned. When done baking, place cookies on a cooling rack.
  3. To make frosting filling: Slowly mix together powdered sugar, butter, and cream. Add a bit more powdered sugar if the frosting is runny, or a bit more cream if the frosting is too dry.
  4. To assemble cookies: Find two cookies about the same size (make sure the cookies are cool before assembling). Sandwich cookies together using a heaping teaspoonful of frosting.
