How To Make Raspberry Ketchup

I was going to make a plain batch of homemade ketchup, but decided to throw in some raspberries right at the end for something a bit more interesting. It was great! The slightly sweet ketchup nicely complimented the salty French fries.

To make raspberry ketchup, you’ll need:

  • 2 large tomatoes, chopped
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon garlic powder
  • 2 tablespoons red wine vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Sriracha sauce (optional)
  • 6 fresh red raspberries

Combine all ingredients in a saucepan and simmer for about 10 minutes. Set aside to cool. Transfer to a blender and puree until smooth.

Extra Crispy Baked French Fries

Prep Time: 30 minutes
Cook Time: 15 minutes
Total Time: 45 minutes

Soaking the potatoes is a critical step for crispy oven-baked fries. I soaked this batch for about an hour and changed the water twice to remove some of the starch.

Ingredients

  • 2 large Russet potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons coconut oil

Instructions

  1. Peel potatoes. Cut potatoes in half lengthwise. Place the cut side down and cut into 1/4 inch wide strips. Cut each strip into 1/4 inch fries.
  2. Rinse potatoes. Place in a bowl of cold water and refrigerate. Soak for 30 minutes to an hour, changing water twice. Drain potatoes and pat dry with a paper towel.
  3. Preheat oven to 450F. Place parchment paper over a large baking sheet and coat with a little olive oil (or spray with cooking spray).
  4. Place potatoes in a bowl and drizzle with olive oil and sprinkle with spices. Toss to evenly coat. Place potatoes in a single layer on the baking sheet. Drizzle with a bit more olive oil. Bake for approximately 15 minutes, or until French fries are crisp.
  5. Serve with raspberry ketchup (recipe above).
