The other day I was in the grocery store, eyeing a bag of carrots that cost only $1.29.

I thought to myself, “What if I made French fries out of carrots? What a brilliant idea! Why hasn’t anyone thought of that before?

Well, you see, someone has thought of that before. In fact, many, many people have thought of that before. Like so many of my “original ideas”, someone else thought of it first.

I’m convinced that there are no original recipe ideas out there anymore. Everything that can be done probably has been done.

How much further can we push ourselves? How much more creative must we become?  Please, someone tell me I’m wrong!

The Cost: $1.44 For Entire Recipe

  • 1 pound fresh carrots (about 10 to 12 carrots) = $1.29
  • Olive oil = $.10
  • Spices = $.05

A Sneaky Way To Get Kids To Eat Veggies

I don’t have kids, but if I did, I would be all over this recipe as a way to get them to eat their vegetables.

They’re essentially just roasted carrots. Yawn.

But when you call them carrot fries, they go from boring vegetable to fun and exciting snack. And did I mention they’re super healthy?

Carrot Fries

Yield: 2 large or 4 small servings
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes

Look for carrots that are roughly the same circumference on the top and the bottom. You want the pieces to be as close to the same size as possible to ensure even cooking.

Ingredients

  • 1 pound fresh carrots, peeled
  • 1 teaspoon hot chili powder
  • 1 teaspoon fine grain sea salt
  • 2 tablespoons coconut oil

Instructions

  1. Preheat oven to 425F. Cut each carrot into french fry shapes. Each carrot should make about 12 fries.
  2. Place carrots in a mixing bowl and toss with coconut oil and spices. Place in a single layer on a large baking sheet. Bake for approximately 15 minutes on one side. Flip, and bake for an additional 15 minutes or so, until carrots are lightly browned.
  3. Serve with Sriracha-mayonnaise or your favorite dipping sauce.
