I’ve spent the last couple of weeks browsing, taste testing and trial and error-ing through heaps of “in a mug” or “in a cup” recipes.

Let me tell you: It’s been awesome.

Without further ado, I am excited to share my 5 favorites with you!

Top 5 “In a Mug” Recipes

#5: Chocolate-Peanut Butter Mug Cake

Chocolate and peanut butter is pretty much the best flavor combination ever. If you’re a chocolate/peanut butter fan, you could be eating this yummy microwave cake in the next five minutes.

Is this the best ever peanut butter dessert made in a mug? Decide for yourself.

Ingredients:

  • 3 tablespoons flour
  • 2 tablespoons sugar
  • 1 1/2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons milk
  • 1 1/2 tablespoons vegetable oil
  • 1 tablespoon peanut butter

In a large mug, sift together the dry ingredients. Add milk, vegetable oil, and peanut butter and mix until smooth. Microwave on high for 1 minute and 10 seconds. See the original recipe at The Novice Chef.


 #4: Coffee Cake in a Cup

Try this recipe with or without egg. If you use an egg, it will be dense and compact. If you leave it out, the cake will be more crumbly like a traditional coffee cake. If you’re unsure, try beating an egg in a small bowl and adding a tablespoon or so to the batter.

Ingredients for cake:

  • 1 tablespoon butter
  • 2 tablespoons sugar
  • Egg (see notes above)
  • 2 tablespoons sour cream
  • 2 drops vanilla
  • 1/4 cup flour
  • 1/8 teaspoon baking powder

Ingredients for crumb topping:

  • 1 tablespoon butter
  • 2 tablespoons flour
  • 2 tablespoons dry oatmeal
  • 1 tablespoon brown sugar
  • Dash of cinnamon

To make cake, place butter in large mug and microwave for a few seconds until softened. Add sugar and mix with a fork until creamy. Stir in egg, if using. Add sour cream, vanilla, flour, and baking powder. Mix until smooth.

To make crumb topping, mix all ingredients together until crumbly. Place on top of cake batter and microwave on high for one minute and 10 seconds. Recipe adapted from Pretty Prudent.


#3: French Toast in a Cup

I was surprised how much this tasted like “real” French toast. But because the bread was cubed, it had almost a bread pudding feel to it. In any case, this was a super delicious dessert/breakfast that I will certainly make again.

Ingredients:

  • 1 to 2 slices of bread, cubed
  • 1 egg
  • 3 tablespoons milk
  • 1 tablespoon sugar
  • Dash of cinnamon

Butter the inside of a large mug. Add bread cubes. In a separate bowl, whisk egg, milk, sugar, and cinnamon. Pour egg mixture into the mug. Press down on the bread so that all of the cubes are moistened. Microwave for 1 minute and 20 seconds. Top with syrup, whipped cream, or sour cream-brown sugar sauce. #2: Individual Chocolate Chip Cookie

No kidding, these taste like fresh-out-of-the-oven chocolate chip cookies. You can thank me later.

Ingredients:

  • 1 tablespoon butter, melted
  • 1 tablespoon sugar
  • 1 tablespoon brown sugar
  • 3 drops of vanilla
  • 1 egg yolk
  • Pinch of salt
  • 1/4 cup flour
  • 2 tablespoons chocolate chips

In a small mixing bowl, combine butter, sugars, vanilla, and egg yolk. Add flour and salt. Place in a small microwaveable bowl or ramekin. Microwave on high for 40 to 60 seconds. See the original recipe at No. 2 Pencil.

These brownies were over-the-top delicious – especially when topped with freshly whipped cream.

Ingredients:

  • 4 tablespoons flour
  • 4 tablespoons sugar
  • 2 tablespoons unsweetened cocoa powder
  • Pinch of salt
  • 2 tablespoons vegetable oil
  • 2 tablespoons water
  • 1 tablespoon chocolate chips

3 Tips For Making “Mug”Nificent Microwave Desserts

Sometimes mug cakes and other made-in-the-microwave desserts don’t taste great. They can be spongy and dry. Here are a few tips to help you make the best mug cakes and desserts:

  • Eggs – Some mug cake recipes call for a whole egg. That’s a whole lotta egg for one small mug. These recipes are super adaptable, so try adding just a half of an egg, or leave the egg out entirely if you’re unhappy with the texture.
  • Cook time – Desserts can dry out quickly in the microwave. To be safe, start out by cooking for the minimum required time. Then test it out. You want a moist – not a dry and spongy – mug dessert.
  • Trial and error – One thing I love about mug cakes and desserts is that they are super cheap to make. If your first attempt is unsuccessful, you’re only out a few cents. Anyone can afford to do a little trial and error with these types of recipes. Try adding chocolate chips, marshmallows, peanut butter, nuts or other tasty ingredients.
