I’m always on the lookout for healthy dessert recipes. Especially ones that don’t taste like they’re healthy. Know what I mean?

I can sniff out untasty yet “healthy” dessert recipes from a mile away. For me, that’s really sour fruit-based desserts, watery or dry desserts. You know the drill.

This particular recipe – raw espresso bean cookie dough bites – totally satisfies my dessert cravings.

It tastes like raw cookie dough. It delivers a jolt of caffeine thanks to the espresso beans.

And it’s healthy in the fact that it uses uncooked and unprocessed ingredients. What more could you ask for?

Technically, if you consider the fact that chocolate-covered espresso beans are processed, this recipe is not raw. But if sticking to a raw diet is important to you, you could certainly substitute raw cacao nibs or something similar.

Raw Espresso Bean Cookie Dough Bites

Yield: 17 cookie dough bites
Prep Time: 10 minutes
Total Time: 10 minutes

A word of warning: Be careful not to over process these ingredients when using a food processor. You could quickly go from the perfect consistency to something that resembles cashew butter.

Ingredients

  • 2/3 cup raw cashews
  • 1/3 cup oats
  • 2 tablespoons agave nectar or raw honey
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/3 cup chocolate-covered espresso beans, pulsed in the food processor a few times to break up

Instructions

  1. Using a food processor, pulse cashews and oats until they become a fine powder. Add agave nectar (or honey), maple syrup, and vanilla until incorporated. Do not over-process.
  2. Stir in chopped espresso beans by hand. Form into bite-sized balls and place in the refrigerator until ready to serve, or freeze to eat later.
