Dates filled with peanut butter and flax seeds, the quickest breakfast ever

I’ve had a bit of a breakfast dilemma over the past few months.

This summer, I was obsessed with this peanut butter cup smoothie. I would start pretty much every day in the same  delicious, not to mention healthy, way.

Then all of a sudden, I got sick of this smoothie. It was like my body said “Enough!” and wanted something different.

My former favorite breakfast

Since then, I’ve had the hardest time trying to figure out what to eat for breakfast. I’m trying to cut down on wheat products, so my previous go-to English muffin with peanut butter and jelly sandwich was out. I like Greek yogurt with fresh fruit and nuts, but sometimes it’s just too sour for me.

Then the other morning, I was running late and considering skipping breakfast – but quickly scanned the fridge for possible breakfast items:

Mayonnaise. Carbonated water. Onions. Dates. Milk. Eggs. Peanut butter.

Back up.

Dates. And peanut butter.

Add some flax seeds and you’ve got breakfast. In less than one minute.

The next time you’re in a hurry and tempted to skip breakfast, make these. They taste like candy, but are really healthy – and cheap too.

Peanut Butter-Filled Dates

Yield: 8 date halves

I'm secretly convinced that dates are actually candy bars in disguise. They are so delicious and naturally sweet. This particular recipe is great for breakfast, but also passes as a healthy dessert.

Ingredients

  • 4 Medjool dates, halved and pitted
  • 3 tablespoons peanut butter (or almond butter for Paleo/Whole30 diets)
  • 1 tablespoon flax seeds (or chia seeds)

Instructions

  1. Fill each date half with peanut butter. Sprinkle with flax seeds (or chia seeds). Eating these on the go is totally acceptable and encouraged.
