These pumpkin-oat clusters are somewhere between a cookie and a scone, but they’re not really either. I could only come up with cluster to describe them.

3-Ingredient recipe: The base of these clusters is made up of only 3 ingredients:

  • Canned pumpkin
  • Oats
  • Sweetener

However, you can customize them by adding all sorts of additional ingredients like:

    • Chocolate chips
    • Pecans
    • Cinnamon
    • Dried cranberries

About The Recipe: 3-Ingredient Pumpkin Oat Clusters

  • Easy to make: These are CRAZY easy to make. Just mix up the dough (2 minutes), add extra ingredients (1 minute), and bake for about 15 minutes.

3-Ingredient Pumpkin Oat Clusters

Yield: 10 cookies

Feel free to add extra ingredients, listed below, to make these cookies even more delicious.

Ingredients

  • 1 cup old-fashioned oats
  • 1/2 cup + 1 tablespoon canned pumpkin
  • 2 tablespoons maple syrup
  • Cinnamon
  • Chocolate chips
  • Pecans
  • Dried cranberries
  • Dried coconut

Instructions

  1. Preheat oven to 350F. In a mixing bowl, combine oats, pumpkin, and maple syrup. Add your choice of add-ins, if desired.
  2. Place 1 rounded tablespoon of dough onto a baking sheet. Bake for 12 to 15 minutes. Remove from baking sheet and cool completely.
