  • The turkey is simply seasoned with a bit of soy sauce and lime juice.
  • Additional toppings are sprinkled on: Peanuts, red bell pepper, cucumber, green onions.
  • The lettuce wraps are served with a simple peanut sauce using ingredients you probably have on hand at home.

Turkey Lettuce Wraps With Peanut Sauce

Yield: 8 lettuce wraps
Prep Time: 15 minutes
Total Time: 15 minutes

For paleo and Whole30 diets: Use almond butter instead of peanut butter, almonds instead of peanuts, and coconut aminos instead of soy sauce.

Ingredients

  • 1 1/2 cups leftover turkey, chopped
  • 1 tablespoon soy sauce
  • Juice from 1 lime
  • 1/2 cup peanut butter
  • 1 tablespoon soy sauce
  • 2 teaspoons brown sugar
  • 2 teaspoons sriracha sauce
  • Lettuce leaves (I used butter lettuce)
  • Chopped peanuts
  • Chopped red bell pepper
  • Chopped green onion
  • Diced cucumber
  • Lime segments

Instructions

  1. Gently toss turkey with soy sauce and lime juice. Set aside.
  2. Place peanut sauce ingredients in a blender and blend until smooth.
  3. Assemble turkey wraps: Start with a large lettuce leaf, add turkey, top with peanuts, red bell pepper, and green onion. Drizzle peanut sauce over the wraps. Squeeze on additional lime juice, if desired.
