They are perfect for when you want a single serving of cake – whether you’re trying to control portions or if you’re simply cooking for one. They’re also great for when you just don’t need a whole cake.

This apple-cinnamon mug cake is a delicious fall-inspired cake that takes about 5 minutes to mix up – and 2 more to microwave. It contains a whole apple (half is grated, half is cubed), so every bite permeates with apple flavor.

Apple-Cinnamon Mug Cake

This recipe makes a huge mug-full of cake, enough for two people. This recipe can easily be halved: Just start out by microwaving the cake for 1 minute 30 seconds instead of 2.

Total Time 14 minutes

Ingredients

  • 1/2 cup plus 3 tablespoons flour
  • 4 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon or apple pie spice
  • 1/2 cup milk
  • 1 tablespoon sour cream
  • 4 tablespoons butter, melted
  • 1 small apple: Half is grated, and half is cut into small cubes

Instructions

  1. In a large microwave-safe mug, mix dry ingredients. In a separate bowl, combine milk, sour cream, and butter. Add wet ingredients to dry ingredients and mix until combined. Stir in apple - half of the apple is grated, and half is cubed.
  2. Microwave on high for 2 minutes. At that point, do the toothpick test: If a toothpick inserted into the middle of the cake comes out clean, then the cake is done. If it is still doughy, microwave for a few more seconds, up to 30 seconds.
  3. Cool slightly, and serve with fresh whipped cream or vanilla ice cream.
