This cheesy pinto bean dip is extra cheesy. In fact, it has a 2:1 bean to cheese ratio. Any higher and the beans would be an afterthought!

About The Recipe: Cheesy Pinto Bean Dip

I’ve never meat a bean dip I didn’t like. But I wanted to make a homemade bean dip that was extra cheesy.

The process is pretty simple:

  • Start with either canned or homemade pinto beans.
  • The bean base is cooked in a frying pan – you’ll mash the beans as you go.
  • At the end, you’ll stir in 3/4 of the cheddar cheese, place it in an oven-safe bowl, top with the remaining cheese, and broil until the cheese is melted and bubbly.

Cheesy Pinto Bean Dip

Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup yellow onion, finely chopped
  • 2 cups cooked pinto beans
  • 1/2 teaspoon garlic powder
  • 1 Roma tomato, chopped
  • 1/4 cup chopped pickled jalapeno peppers
  • 1/4 cup water
  • 1 cup finely shredded cheddar cheese, divided

Instructions

  1. Heat oil over medium-high heat in a frying pan. Add onions and cook for 3 minutes, until they begin to soften.
  2. Add beans, Roma tomato, jalapeno peppers, garlic powder, and water. Continue to cook, stirring and mashing beans as you go. Add more water, if needed, a tablespoon at a time.
  3. Stir in 3/4 cup cheddar cheese. Place beans an oven-safe bowl. Sprinkle with remaining cheese.
  4. Place under broiler for about 30 seconds to broil cheese. Remove from broiler and serve hot with tortilla chips.
