Why Ring Bologna?

It’s no secret I’m a fan of ring bologna. It’s an affordable meat that’s pre-cooked, so it’s easy to add to all kinds of dishes.

I like the saltiness it adds to recipes. Combining it with Brussels sprouts was a no-brainer!

Note: You can use traditional, beef or turkey ring bologna for this recipe. You can also use Polska Kielbasa.

It’s a simple combination of maple syrup and Dorothy Lynch Dressing & Condiment. I ALWAYS have a bottle of this versatile sauce stocked in my pantry. It can be used as a salad dressing, but is also great in a wide variety of recipes:

Tips For Roasting Brussels Sprouts

How to roast Brussels sprouts so they're crispy and browned.

The last thing you want are soggy Brussels sprouts. How to avoid this recipe mishap? Don’t overcrowd the pan! This helps ensure crispy, roasted edges.

If your baking sheet isn’t large enough, feel free to divide the Brussels sprouts into two batches on two different baking sheets.

Maple-Roasted Brussels Sprouts And Ring Bologna

Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

Ingredients

  • 1 lb. Brussels sprouts, stems removed and halved
  • 2 tablespoons olive oil
  • Salt and pepper
  • 14-ounce package ring bologna or Polska Kielbasa
  • 1 apple, cut into small chunks
  • 1/2 cup Dorothy Lynch Dressing & Condiment
  • 2 tablespoons maple syrup

Instructions

  1. Preheat oven to 425 degrees F. Lay Brussels sprouts face down on
    your largest baking sheet. You can use two baking sheets if necessary to ensure
    adequate space between individual sprouts. This will help make them crispier.
    Drizzle with olive oil and sprinkle with salt and pepper.
  2. Cut ring bologna into ½-inch coins. Place ring bologna and apple on
    a separate baking sheet, and drizzle lightly with olive oil.
  3. Whisk Dorothy Lynch Dressing & Condiment with maple syrup. Set
    aside.
  4. Bake Brussels sprouts for 15-20 minutes. Place ring bologna and
    apple pan in oven during last 10 minutes of roasting.
  5. Remove both pans from the oven. Carefully combine Brussels sprouts
    and ring bologna so they’re all on the same pan. Drizzle with sauce and stir to
    evenly distribute. Return to oven and bake for an additional 5 to 7 minutes.
