Maple-Roasted Brussels Sprouts And Ring Bologna
This is a sponsored post for Dorothy Lynch Home Style and Light & Lean Dressing & Condiment. All thoughts and opinions are my own.
There is no shortage of awesome Brussels sprouts recipes on the internet.
I think it’s because the masses have discovered this irresistible taste combination:
- Roasted Brussels sprouts
- A salty meat (like pork belly or bacon)
- Something sweet (like honey, dates, apples or another fruit)
With this recipe, I’m not reinventing the wheel. The wheel, in this case, doesn’t need reinventing.
Rather, I’m just giving you a new option. A new spin on this winning taste combination:
Maple-roasted Brussels sprouts with ring bologna.
Why Ring Bologna?
It’s no secret I’m a fan of ring bologna. It’s an affordable meat that’s pre-cooked, so it’s easy to add to all kinds of dishes.
I like the saltiness it adds to recipes. Combining it with Brussels sprouts was a no-brainer!
Note: You can use traditional, beef or turkey ring bologna for this recipe. You can also use Polska Kielbasa.
The Sauce
What brings this recipe together into one awesome dish? The sauce!
It’s a simple combination of maple syrup and Dorothy Lynch Dressing & Condiment. I ALWAYS have a bottle of this versatile sauce stocked in my pantry. It can be used as a salad dressing, but is also great in a wide variety of recipes:
- Shrimp po’boy sandwiches
- Chicken fajita bake
- Peanut ramen salad
- Grilled club sandwiches
- Breakfast croquettes
- Game day pulled pork nachos
- Mexican ground beef skillet
- Sheet pan orange chicken and veggies
- Chicken broccoli hotdish
- Spinach tomato tortellini soup
- And more recipes are available at dorothylynch.com
You can find Dorothy Lynch Dressing & Condiment at Walmart, HyVee, and many other grocery stores throughout the Midwest and beyond. It can also be purchased online.
Tips For Roasting Brussels Sprouts
The last thing you want are soggy Brussels sprouts. How to avoid this recipe mishap? Don’t overcrowd the pan! This helps ensure crispy, roasted edges.
If your baking sheet isn’t large enough, feel free to divide the Brussels sprouts into two batches on two different baking sheets.

Maple-Roasted Brussels Sprouts And Ring Bologna
Ingredients
- 1 lb. Brussels sprouts, stems removed and halved
- 2 tablespoons olive oil
- Salt and pepper
- 14-ounce package ring bologna or Polska Kielbasa
- 1 apple, cut into small chunks
- 1/2 cup Dorothy Lynch Dressing & Condiment
- 2 tablespoons maple syrup
Instructions
- Preheat oven to 425 degrees F. Lay Brussels sprouts face down on
your largest baking sheet. You can use two baking sheets if necessary to ensure
adequate space between individual sprouts. This will help make them crispier.
Drizzle with olive oil and sprinkle with salt and pepper. - Cut ring bologna into ½-inch coins. Place ring bologna and apple on
a separate baking sheet, and drizzle lightly with olive oil. - Whisk Dorothy Lynch Dressing & Condiment with maple syrup. Set
aside. - Bake Brussels sprouts for 15-20 minutes. Place ring bologna and
apple pan in oven during last 10 minutes of roasting. - Remove both pans from the oven. Carefully combine Brussels sprouts
and ring bologna so they’re all on the same pan. Drizzle with sauce and stir to
evenly distribute. Return to oven and bake for an additional 5 to 7 minutes.
This is so, so good, and so unique! Thank you Haley. I’m trying to get more vegetables in my diet and have been trying brussel sprouts. Love this- the sweet and savory and unique flavor of the Brussel sprouts. I didn’t have Dorothy Lynch dressing, so I substituted the homemade dressing from your roasted chickpea, cauliflower, grape and avocado bowls for DL, and it’s wonderful. Thanks for another great meal!
