There’s nothing fancy about this dish, but it tastes good, takes about 30 minutes to make, and will feed a few hungry people.

It’s basically a sloppy joe, in pie form. Instead of a traditional pie crust, refrigerator biscuit dough is used, making for a puffy, flaky, foolproof crust.

Using Refrigerator Biscuit Dough

I rarely use refrigerator biscuits, but they are ideal for this sloppy joe pie. Simply flatten out the biscuit dough and place at the bottom of a cast iron skillet or another appropriately-sized ovenproof dish. Make sure the bottom of the pan is completely covered.

What You’ll Need To Make Cheesy Sloppy Joe Pie

  • Refrigerator biscuits (I used Pillsbury Grands): Note, I only used 7 out of 8 biscuits in the container, due to the size of my cast iron skillet. 7 was enough to cover the entire surface of the skillet.
  • Ground beef (I used 85% lean)
  • Onions
  • Shredded cheddar cheese: Feel free to use more than the recipe states!
  • Tomato paste
  • Brown sugar
  • Spices

Can I Use My Own Sloppy Joe Recipe?

Absolutely! You do not have to follow my recipe, below, if you already have a good sloppy joe recipe you like.

However: Make sure that your meat mixture is not too runny. You’ll want it to be quite thick so it stays in tact while baking.

Can I Use Ground Turkey Instead?

This recipe will still taste great if you use ground turkey instead of ground beef. 

Ground turkey is usually cheaper than ground beef, so this is an easy way to save some money.

Cheesy Sloppy Joe Pie

Depending on the size of your skillet or baking dish, you may not need to use all of the biscuit dough. I used 7 out of 8 biscuit dough rounds to fit my 8-inch cast iron skillet.

Ingredients

  • 16.3 ounce package refrigerated biscuits (like Pillsbury Grands)
  • Olive oil
  • 1 yellow onion, finely chopped
  • 1 lb. ground beef
  • 6 ounce can tomato paste
  • 1/4 cup brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400F.
  2. Add a drizzle of olive oil to a large frying pan over medium-high heat. Cook onions for 3 to 4 minutes, until softened. Add ground beef and start stirring and breaking up meat. Add tomato paste, brown sugar, and seasonings. If the meat is too dry, add a tablespoon or two of ketchup and/or water. Cook until meat is browned and fully cooked.
  3. Open refrigerator biscuits and flatten slightly with your hand. Place one biscuit on the bottom of a 8 or 9-inch cast iron skillet (or other appropriately sized baking dish). Continue flattening the biscuits and placing them on the sides of the skillet so the entire surface is covered. I ended up only using 7 out of 8 biscuits.
  4. Place 3/4 of the cheese on top of the biscuit dough. Spoon the sloppy joe meat on top, and finish with the remaining cheese.
  5. Bake for 20 minutes, until biscuits are browned and cheese is melted.
