If you’re a pizza lover who is trying to stick to a paleo or Whole30 diet (not to mention gluten-free, grain-free, and dairy-free), you probably miss some of your favorite foods – like pizza.

While soup will never taste exactly like pizza – no matter how hard you try – this recipe combines many of the flavors of pizza in a thick, hearty stew.

What You’ll Need To Make Paleo Pizza Stew

This stew is chock full of ingredients you’ll find on a pizza – especially the healthy ones! Here’s what you’ll need:

  • Pizza sauce: Look for paleo-friendly pizza sauce at the grocery store – or one that’s low in sugar. You can also make your own
  • Chicken broth, stock or bone broth. I typically use Better Than Bouillon dissolved in water – a cheaper option than purchasing cans or cartons of broth.
  • Pork sausage: I often make a batch of pizza sausage ahead of time and store it in the freezer so I can make homemade pizza in a breeze. The recipe, below, includes from-scratch instructions. You can use fresh or frozen pork sausage (thawed), with or without additional seasonings added.
    • Try adding chopped nitrate-free pepperoni in place or in lieu of sausage
  • Veggies: There is some flexibility in terms of what vegetables will work in this stew. I used onions, garlic, mushrooms, kale, and canned tomatoes. Other veggies that would work include:
    • Spinach
    • Bell peppers
    • Zucchini
    • Fresh tomatoes
  • Black olives: Totally optional, but add to the “supreme pizza” likeness of this stew.
  • Seasonings: I added a bit more Italian seasoning (taste before you add, as the pizza sauce you use may already have enough seasoning), and some nutritional yeast to give it a bit of cheese flavor.

Here are some easy ways to save money on this recipe:

  • Use chicken broth powder or Better Than Bouillon instead of purchasing cans or cartons of chicken broth
  • Use veggies that you already have on hand – this is a great recipe to use up softening vegetables
  • Consider that this recipe is totally adaptable. You can skip the black olives and nutritional yeast, for example. It will still taste great.

The amount of seasoning and spices you'll need to add will depend on the type of pizza sauce you are using - and your personal preferences. Taste the soup before adding the Italian seasoning and nutritional yeast.

Ingredients

  • 1 yellow onion, diced
  • Olive oil
  • 1/2 lb. ground pork sausage
  • 4 garlic cloves, minced
  • 8 ounce container mushrooms, sliced
  • 2 to 3 cups packed kale leaves, chopped
  • 1 jar of paleo-friendly pizza sauce (13-16 ounce jar)
  • 1 can diced tomatoes (14.5 ounce)
  • 2 cups chicken broth
  • 2.25 ounce can sliced black olives
  • 1 tablespoon apple cider vinegar
  • Italian seasoning, optional
  • Nutritional yeast, optional (for cheese-like flavor)

Instructions

  1. In a large soup kettle, heat a drizzle of olive oil over medium-high heat. Add chopped onions and cook, stirring, for 3 minutes, until onions begin to soften. Add ground pork and begin breaking up meat until it is browned.
  2. Add mushrooms and kale. Cook, stirring, for 3 minutes, until they begin to soften.
  3. Add pizza sauce, canned tomatoes, chicken broth, apple cider vinegar and black olives. Bring soup to a simmer and cook for 10 to 15 minutes. Add optional Italian seasoning and nutritional yeast. and black olives.
