What’s For Dinner Summit: 4 Ground Beef Recipes

Thanks for tuning into my video highlighting 4 simple dinner recipes using ground beef as a base.

Here’s what you need to get started with all 4 recipes:

For ground beef mixture, used in all 4 recipes:

  • 2.5 lbs ground beef
  • 1 large yellow onion, finely chopped
  • 2 teaspoons garlic powder
  • Salt and pepper

Reserve 1/4 of this mixture for the ground beef hotdish.

To the remaining 3/4 of the ground beef mixture add:

  • 1 packet taco seasoning
  • 1/3 cup water

For ground beef tacos:

  • Small corn tortillas
  • 1/4 cup taco seasoned ground beef mixture per taco
  • Shredded Mexican blend cheese

Brush each tortilla with avocado oil. Add seasoned ground beef and cheese. Press down on each tortilla. Bake at 400F for about 10 minutes.

Top with:

  • Shredded lettuce
  • Chopped tomatoes
  • Jalapenos
  • Sour cream
  • Salsa
  • Hot sauce

For taco pizza:

  • 1 ready made pizza crust (or homemade)
  • 1/2 cup tomato salsa
  • 1 cup seasoned ground beef
  • Sliced black olives
  • Sliced onions
  • 1-2 cups shredded cheese (mozzarella or Mexican blend)

Bake according to pizza crust package instructions.

Top with:

  • Shredded lettuce
  • Chopped tomatoes
  • Jalapenos
  • Fresh cilantro
  • Hot sauce

Fry bread tacos (Indiana tacos/Oof-da Tacos) are one of 4 recipes using overlapping ingredients + ground beef.

For Indian tacos:

  • Rhodes bread dough (dinner roll size), thawed
  • Avocado oil, for deep frying
  • 1/2 cup seasoned ground beef per taco
  • Refried or pinto beans, optional
  • Shredded cheese
  • Salsa
  • Sour cream

Heat oil to 375F. Deep fry each bread dough round until golden brown. This won’t take long. Set aside.

Top each fried bread dough round with ground beef, cheese, tomatoes, beans, salsa, sour cream, etc.

Ground beef hotdish:

  • 8 oz. cooked pasta of choice (shells, rotini, etc.)
  • 1 lb. ground beef mixture (without taco seasoning added)
  • 2 cans tomato sauce
  • 3 tablespoons butter, melted
  • 1/2 pint cottage cheese
  • 1 package cream cheese, softened
  • 1/2 cup sour cream
  • 1 green onion, chopped
  • 1 cup frozen sweet corn
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • 2 teaspoons garlic powder
  • 2 teaspoons sugar
  • Salt and pepper, to taste

Mix and add all ingredients to a casserole dish. Bake at 375F for 35 to 40 minutes. Top with extra shredded cheese towards the end of baking time.

Bonus recipe: Cilantro-lime sauce

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 to 1 jalapeno pepper, seeded
  • 1 teaspoon garlic powder
  • Juice from 1 lime
  • Handful of fresh cilantro leaves
  • Pinch of salt

Blend everything together until sauce is smooth. Drizzle on the tacos and pizza – and everything else that needs a flavor wake-up!

Substitutions

All of these recipes share common ingredients, and all have a ground beef base.

If you prefer, you can use ground turkey or ground chicken instead of ground beef.

For a vegetarian option, you can use beans: Pinto beans or refried beans would taste great on the pizza and in both the tacos recipes.

For the hotdish, skip the beans. This will taste fine with no meat.
