Scrambled Egg Bowls (Totally Customizable)

I consider scrambled eggs to be one of the most perfect foods ever.
Scrambled eggs are satiating, healthy, affordable – and when they’re cooked correctly (more on that later), they’re absolutely melt-in-your-mouth delicious.
If you’re looking to save money on food, start incorporating more eggs into your diet. Even with rising food costs, eggs are still affordable.
And don’t worry about getting tired of eggs: There are virtually endless ways of preparing them!
Take for example, these scrambled egg bowls. The scrambled egg base is topped with a variety of ingredients. If you set out toppings and let your family build their own bowls, no two bowls will look the same.
This is a great dish to prepare if you’re looking to clean out your fridge or freezer:
- Shred that block of leftover cheese that’s been sitting in your fridge
- Chop up that 1/2 onion in your fridge
- Fry up the opened package of breakfast sausage you have in your freezer
You get the idea: Get creative and use what you already have on hand to save $$$.
Toppings Options
Feel free to get creative with your toppings for these breakfast bowls. Inventory your fridge, freezer and cupboard for inspiration. Here are some ideas to get you started:
Cooked (or heated) toppings:
- Breakfast sausage (links or patties, diced)
- Crumbled bacon
- Chorizo sausage
- Sausage gravy
- Sauteed bell peppers
- Sauteed onions
- Sauteed tomatoes
- Sauteed mushrooms
- Black beans
For these toppings, you’ll want to heat them up prior to making the scrambled eggs. Keep them warm in the frying pan while you cook the eggs (which only takes a minute or two).
Fresh (or cold) toppings:
- Pico de gallo
- Salsa
- Chopped tomatoes
- Chopped green onion
- Chopped chives
- Diced jalapenos
- Diced avocado
- Green chili peppers (from a can)
- Flavored whipped cream cheese (chive, garlic & herb, French onion)
- Cheese: Shredded cheddar, pepper jack, Monterey jack, etc.
- Chili oil/chili crisp
- Spices: Sumac, crushed red pepper, your favorite seasoning blend for eggs
For the breakfast bowls pictured below, I used garlic & herb whipped cream cheese, chopped tomatoes, diced sausage patties, chopped bacon, and chopped green onions.
Start With Perfect Scrambled Eggs
Here’s the deal: These scrambled egg bowls are only as good as the scrambled eggs you make.
And if there’s one dish I’ve mastered in my life of cooking, it’s scrambled eggs. I’ve perfected the heck out of them.
To make perfect scrambled eggs that are fluffy and melt in your mouth, you’ll need:
- Fresh eggs
- Heavy whipping cream (not half-and-half, not whole milk)
- Butter (not margarine, not cooking oil)
- Salt and pepper
That’s it. No unexpected ingredients like Greek yogurt or creme fraiche. Just whole, real ingredients cooked in a specific way.
The main thing to keep in mind when making scrambled eggs is to cook them very low and very slow.

Serving Suggestions
This recipe is great whether you’re cooking for one – or hosting a large group for a breakfast or brunch:
If you’re hosting guests, put the toppings in individual bowls and let your guests choose their own toppings. Another fun and cheap breakfast recipe to try: Loaded hash browns. Same idea, except instead of eggs we’re topping hash browns.
If you’re cooking for your family, this could also be a fun idea – but you may want to scale it back a bit. No need to prepare 20 different toppings on a weeknight breakfast-for-dinner!
Serve these loaded scrambled eggs with some fresh biscuits, a glass of orange juice, and fresh fruit on the side.
Scrambled Egg Bowls
Have your toppings ready to go to place on top of the warm scrambled eggs. Start with the cheese & cream cheese (if using) so it melts.
Ingredients
- 4 fresh large eggs
- 4 tablespoons heavy whipping cream
- 4 tablespoons butter
- Salt and pepper
Toppings; your choice of:
- Sausage (patties or links)
- Chopped bacon
- Chorizo sausage
- Sausage gravy
- Sauteed vegetables: Bell peppers, onions, mushrooms, tomatoes
- Black beans
- Pico de gallo or salsa
- Fresh vegetables: Chopped green onions, chives, onions, jalapenos, avocado,
- Green chili peppers
- Shredded cheese (cheddar, pepper jack, Monterey jack, etc.)
- Chili crisp
- Spices: Sumac, crushed red pepper, other seasoning blend
Instructions
- Prepare toppings before cooking eggs. Directions will vary depending on what ingredients you choose: Fry the meat, saute the veggies, get the cold/fresh ingredients ready to go.
- Crack eggs into a small mixing bowl. Using a small whisk or fork, beat until the blended. The egg white and yolk should be close to uniform. Whisk in heavy whipping cream.
- Use a non-stick frying pan. Heat butter over medium-low heat until melted. Pour eggs into pan, wait 15 seconds, and very slowly start pushing the eggs with a small spatula. Continue this slow stirring/egg pushing until all the eggs are cooked and no raw egg remains. At the very last second, stir in salt and pepper. Be very careful not to overcook - immediately slide eggs onto plate.
- Place scrambled eggs into bowls or plates. Add toppings of your choice.
