- Cabbage: I used 1/2 head of cabbage for this recipe, shredded (about 7 to 8 cups). But you can substitute a bag of coleslaw mix.
- Ground beef: I used 85% lean for this recipe.
- Onion: One white or yellow onion, finely chopped.
- Mushrooms: Mushrooms are optional – I had 4 leftover in my fridge that I sliced and threw in.
- Garlic: Chopped fresh garlic, minced garlic from a jar or garlic powder will work
- Coconut aminos: To keep this dish paleo and keto-friendly, as well as gluten free, you’ll use coconut aminos. You can purchase at Trader Joe’s or in the health food section of most grocery stores. You can substitute soy sauce or tamari if you’re not adhering to a GF diet. The coconut aminos give this dish a hint of Asian flavor, akin to stir fry.
- Toppings: Sesame seeds and chopped green onion (or everything bagel seasoning, in a pinch)
- Optional: Add some shredded carrots for more color, flavor and nutritional value

Ingredients
- 1 small white onion, finely chopped
- 2 tablespoons coconut oil
- 1 lb. ground beef
- 7 to 8 cups shredded cabbage
- 4 mushrooms, sliced (optional)
- 1 tablespoon minced garlic
- 1/4 cup coconut aminos
- Sesame seeds, for topping
- Green onion, chopped, for topping
Instructions
- Heat coconut oil over medium-high heat in a large skillet. Add onion and cook, stirring, for 2 minutes, to soften. Add ground beef and break up the meat as it browns.
- Add garlic and shredded cabbage and continue stirring and breaking up the meat. Add coconut aminos and stir.
- Continue cooking over medium heat and stirring, until cabbage softens, about 4 to 5 minutes.
