Come autumn, I’m all about the squash.
Squash in all its forms is an extremely affordable food with nutritional value. And the best part? It can be prepared in so many delicious ways.
You’ll want to acquaint yourself with the many varieties of squash. Acorn and butternut squash are very versatile and typically easy to find in the grocery store or in farmers’ markets.
Delicata squash is one of my favorites to prepare because it doesn’t need to be peeled. Just cut, removed the seeds and proceed with cooking.
Squash makes a great side dish, but don’t count it out as a main dish. Add some meat and greens, and you have a healthy, complete meal.
