Peanut butter cup smoothie recipe

Many of my summer mornings have started the same way:

  • Sleep in as late as late as possible
  • Log on to my computer
  • Make this peanut butter cup smoothie
  • Savor every spoonful

Earlier this summer I discovered this recipe from Happy Herbivore.

I’m not usually a smoothie person (too sour) and I’m not really a banana person (too meh). But for some reason, this particular smoothie rocks my mornings.

Why? It uses ingredients you likely have at home right now. It tastes like a peanut butter cup. It can even pass for dessert.

So this is clearly the smoothie of my summer. A summer that is going way too fast.

Go make yourself this smoothie before you start craving warm breakfasts. Even if it’s not breakfast time.

Here’s a song that will remind you to relax and savor the rest of summer, and August in particular:

Peanut Butter Cup Smoothie: The Cost

Another reason I love this peanut butter cup smoothie is because it’s so incredibly cheap:

  • 2 bananas = $.45
  • Peanut butter (1 tablespoon) = $.11
  • Cocoa (1 tablespoon) = $.12
  • Non-dairy milk (1/4 cup) = $.25

Total cost for one smoothie = $.93

Peanut Butter Cup Smoothie

Yield: 1 smoothie
Prep Time: 3 minutes
Total Time: 3 minutes

To make this smoothie extra nutritious, I added chia seeds and raspberries (see photo, above).

Ingredients

  • 2 frozen bananas (Peel bananas, cut into large slices, and freeze overnight. Don't attempt to peel a frozen banana!)
  • 1 tablespoon peanut butter
  • 1 tablespoon unsweetened cocoa
  • 1/4 cup milk (Your choice - I used vanilla almond milk)

Instructions

  1. Place all ingredients in a blender and puree until smooth. Add more milk, if needed.
