Have you ever eaten elote?

It’s a popular Mexican street food that consists of a corn on the cob slathered with mayonnaise, cotija cheese, hot peppers, and a squeeze of lime juice. There are many variations of elote, but this is a perhaps the most well known.

I happen to love elote, and recently decided to experiment making a variation of it at home.

About The Recipe

I don’t always have corn on the cob on hand (who does?) so this is a great recipe to settle your elote craving with less hassle. All the flavors are there, in salad form:

  • Corn
  • Lime
  • Hot pepper

And some additional (delicious!) flavors are added as well:

  • Garlic
  • Bacon
  • Green onion
  • Red bell pepper

The end result is a hearty summery salad that is bursting with flavor. It’s great as a side dish for a summer picnic or gracing the table of a potluck dinner.

Mexican Street Corn (Elote) Salad

Yield: 4 servings

Serve this salad with lime wedges for even more flavor.

Ingredients

For dressing

  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • Juice from 1/2 lime

For salad

  • 2 cups fire-roasted sweet corn (I buy mine at Trader Joe's)
  • 1/2 red bell pepper, chopped
  • 2 green onions, chopped
  • 1/4 cup chopped bacon (I buy mine at the grocery store salad bar)
  • 4.5 ounce can green chili peppers (like Old El Paso)
  • 1/4 cup cotija (or Parmesan) cheese

Instructions

  1. Mix dressing ingredients together and chill until ready to serve.
  2. Combine all salad ingredients. Mix in dressing. Serve chilled.
