Harvest Sheet Pan Dinner
Good news: This meal only takes 10 minutes to prep! If you’re looking for something hearty and delicious to feed your family this fall, try this harvest sheet pan dinner.
Sheet pan meals are meals you make on one sheet pan, usually featuring a mix of meat and vegetables.
The ingredients are roasted in the oven and the end result is a hearty meal where everything is served together.
Sheet pan meals are ideal for using up a bit of this and a bit of that from your fridge or freezer.
This particular sheet pan meal was something I threw together while inventorying my own fridge and freezer, which was full of fall flavors and bounty.
So I’m calling this a harvest sheet pan dinner.
A Sheet Pan Meal Featuring The Flavors Of Fall
To make this harvest sheet pan dinner, you’ll need:
- Sweet potatoes: The bulk of this dish is sweet potatoes.
- Apple: The apple adds some sweetness and tartness to this dish. Any apple variety will work! Use what you have.
- Onions: Choose white or yellow onions for this recipe.
- Chicken sausage: I buy flavored chicken sausages at ALDI and Trader Joe’s. For this recipe, I used the organic sweet Italian chicken sausages. But any flavor will work.
- Simple spices: This dish is seasoned simply with salt, pepper, garlic powder, and sage.
- Cooking oil: I try to avoid seed oils, opting for coconut oil or avocado oil instead. But any regular cooking oil will work (canola, vegetable, etc.)
Customizable Serving Size
The beauty of this dish (and all sheet pan meals) is that you can make more or less without any complexity.
This recipe, as written below, will feed 2 to 3 people.
If you are feeding 5 people, for example, feel free to:
- Add 2 more chicken sausages
- Add one more sweet potato
- Add one more apple
- Etc.
If you add more of one ingredient, you’ll just have to add a little more cooking oil and a little more spice to make sure everything is seasoned.
So simple, right?

The beauty of sheet pan meals is that there are so meat, veggie & sauce combinations to try! Experiment with your choice of meat (like chicken, steak, chicken sausage, etc.), vegetables (broccoli, carrots, onions, cauliflower, etc.), and sauce (sweet and sour, gochujang, stir fry sauce, etc.) – and you might find a new meal to add to your dinner rotation.

Harvest Sheet Pan Dinner
This recipe is easy to modify to feed more people. Simply add another sweet potato, chicken sausage, etc., and use a bit more oil and spices.
Ingredients
- 2 medium sweet potatoes
- 1 small yellow or white onion
- 1 apple
- 2 chicken sausage links
- 1 tablespoon cooking oil (avocado, coconut, etc.)
- Salt and pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon dried sage
Instructions
- Preheat oven to 375F.
- Peel sweet potatoes and cut into small pieces. Peel and cut onions into small pieces. Cut apple into small pieces. Arrange on a large baking sheet. Drizzle with oil and sprinkle on spices, gently tossing to evenly coat.
- Bake for 15 minutes, until vegetables and fruit begin to soften.
- Meanwhile, cut chicken sausage links into 1/2-inch slices. When veggies have baked for 15 minutes, remove from oven and add chicken. Drizzle with a teaspoon of oil.
- Continue baking for 10 to 15 minutes, until veggies begin to caramelize and chicken sausage begins to brown.
- Remove from oven, mix everything together, and serve.
