Muesli Recipe
My family hosted a foreign exchange student from Germany when I was in high school. A year after he went back, we visited him and his family. His mom was a wonderful cook and introduced us to some new flavor combinations. One morning for breakfast, she made a wonderful cereal-type mixture of oats, nuts, fruit, and cinnamon called muesli.
It had been years since I made this breakfast dish, and I had forgotten how tasty it is. It’s very simple, but the flavors blend so well together. For me, this is the perfect breakfast: Healthy, hearty, delicious, and best of all, cheap! You likely will have everything you need for this recipe already in your kitchen.
Serve the muesli with a heaping tablespoon of plain yogurt and enjoy.
Muesli Recipe
Yield: 4 servings
How to toast oats: Place oats in a frying pan over medium heat. Cook for approximately five minutes, tossing frequently to avoid burning, until oats are lightly toasted. Throw in the almonds while you toast the oats.
Ingredients:
1 1/2 cups oats (uncooked oatmeal)
1 banana, cut into small chunks
1 small apple, cut into small chunks
1/4 cup toasted almonds
2 tablespoons dried fruit (raisins, cranberries, etc.)
2 tablespoons dried, flaked coconut
1 tablespoon sugar
1 teaspoon cinnamonDirections:
Toast oats and almonds and set aside. Cut fruit. Combine all ingredients in a mixing bowl. Serve with plain yogurt or milk.
