Thanksgiving leftover recipes shouldn’t be complicated or expensive. This recipe makes simple and creative use of leftover turkey:
- The turkey is simply seasoned with a bit of soy sauce and lime juice.
- Additional toppings are sprinkled on: Peanuts, red bell pepper, cucumber, green onions.
- The lettuce wraps are served with a simple peanut sauce using ingredients you probably have on hand at home.
This recipe is easily adapted for paleo and Whole30 diets (see below for details).

Turkey Lettuce Wraps With Peanut Sauce
For paleo and Whole30 diets: Use almond butter instead of peanut butter, almonds instead of peanuts, and coconut aminos instead of soy sauce.

Ingredients
- 1 1/2 cups leftover turkey, chopped
- 1 tablespoon soy sauce
- Juice from 1 lime
- 1/2 cup peanut butter
- 1 tablespoon soy sauce
- 2 teaspoons brown sugar
- 2 teaspoons sriracha sauce
- Lettuce leaves (I used butter lettuce)
- Chopped peanuts
- Chopped red bell pepper
- Chopped green onion
- Diced cucumber
- Lime segments
Instructions
- Gently toss turkey with soy sauce and lime juice. Set aside.
- Place peanut sauce ingredients in a blender and blend until smooth.
- Assemble turkey wraps: Start with a large lettuce leaf, add turkey, top with peanuts, red bell pepper, and green onion. Drizzle peanut sauce over the wraps. Squeeze on additional lime juice, if desired.
