Here’s the deal: I was pleasantly surprised at the quality of microwave cornbread. The texture was about 90% there – it’s a little grainier than traditional cornbread.
But it’s still delicious.
If you’re entertaining guests, or if you have the time and energy to make cornbread from scratch, by all means go the traditional route. I like this recipe, which yields a moist, fluffy, and sweet cornbread.
But for a weeknight meal, when you’re cooking for yourself, or when a last-minute craving for cornbread hits (hello chili!), this cornbread will totally satisfy.

How To Make Microwave Cornbread
This microwaveable cornbread is very easy to make:
- Mix all ingredients together in a small mixing bowl
- Pour batter into a large microwave safe mug sprayed with nonstick cooking spray
- Heat on high for 2 to 3 minutes, or until a toothpick inserted in the middle of the bread comes out clean

A Note About Microwaving
Microwaves can vary greatly in terms of size, power, cooking time, and more.
This cornbread may cook in 2 minutes, 3 minutes – or shorter or longer depending on your microwave.
Keep an eye on the cornbread to make sure it’s not overcooked. You can take it out of the microwave at around the 2-minute mark and test it with a toothpick to see if it’s done.
If not, continue cooking for a few more seconds at a time until done.

Microwaveable Cornbread In A Mug
Because every microwave is different, I've recommended a cooking time of 2 to 3 minutes. Check the cornbread after 2 minutes with a toothpick. If it's not done, continue microwaving until a toothpick inserted in the center of the bread comes out clean.
Use your biggest mug - the cake will really expand while cooking.
Ingredients
- 1/2 cup all purpose flour
- 1/2 cup cornmeal
- 2 tablespoons + 1 teaspoon granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 egg
- 1/2 cup milk
- 2 tablespoons canola or vegetable oil
For honey butter
- 2 tablespoons butter, room temperature
- 1 tablespoon honey
Instructions
- Mix all cornbread ingredients in a bowl.
- Transfer mixture into a large microwave-safe mug sprayed with cooking spray.
- Heat on high in the microwave for 2 to 3 minutes. (Take the cornbread out at 2 minutes, insert a toothpick into the center, and if it comes out clean, the cornbread ready. )
- Allow to cool slightly, tip the mug over to remove cornbread, and top with honey butter.

It’s good! How big is the mug you’re using? I cut the recipe in half and it still needed a 12oz soup bowl.

I only have self rising cornmeal. Should I skip the baking powder?

Can I add Jalapeños in it
Yes, but I would very finely dice them so they cook through quickly.

This was delicious, and just what I was looking for!
I used a 24 oz ramekin, and that was perfect. I wouldn’t recommend using anything smaller than that. I made it GF and used Bob’s Red Mill 1:1 flour. I ended up cooking it for about 4 minutes total.
I usually top cornbread with honey after baking it, and I loved the honey butter with this!
