Cabbage is an extremely budget-friendly food that can be enjoyed in so many different ways!

While buying a head of cabbage is typically the cheapest option, I often buy a bag of shredded cabbage (or coleslaw mix) which is quick and easy to use.

A good starter cabbage recipe: Coleslaw or an Asian chicken salad.

If you have leftover cabbage in the fridge (and other extra veggies), make the creamy vegetable soup.

Otherwise, the reuben bowls are a reader favorite. Cabbage turns into coleslaw, which turns into the base of a gluten-free reuben bowl that has all the traditional reuben ingredients, minus the bread.
