Paleo Chicken BLT Salad

Ingredients

For salad:

  • 4 cups organic romaine lettuce leaves
  • 3/4 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1 1/2 cup shredded rotisserie chicken (or grilled chicken)
  • 1/2 cup crumbled bacon

For sriracha-mayonnaise dressing:

  • 1/3 cup mayonnaise (homemade or Paleo-friendly)
  • 2 tablespoons sriracha sauce
  • Garlic powder, to taste

Instructions

  1. Layer salad ingredients on a large serving tray or individual plates.
  2. Mix dressing ingredients together and drizzle over salad.
